Chivite Merlot Biológico 2007: An ecological wine

Even if the production of all Chivite wines is 100% environmentally friendly, it is the new wine of the house, Chivite Merlot Biológico 2007 the one to actually carry the 'organic wine' certificate given by the D.O. Navarra. Not only was the management in the vineyard completely organic, but also the materials used to bottle the final wine: the cork, the label, the capsule.... all are made of recycling materials. The winemaking process even brought back into use some ancient techniques.

The result is not only a viticulture which respects our already worn-out planet, but it is also a suculent wine which reveals the full potential of the Merlot flavours. It shows aromas of black fruit with a slight hint of pepper and on the palate it is balanced and fresh with hints of plums and spicies, and the soft tannins from the ageing in French oak barrels.

Fernando Chivite wanted to "make wines without make-up which translate into to the bottle what was once in the vineyard. There is no doubt that he achieved it."
