To produce this wine, we began with the strictest selection of very old plots of bush vines from the best areas in the Rueda wine Region; from the Valladolid slopes with fine gravel, locally called “cascajos” and from Segovia, a flat area over 800 meters of altitude with fine rocky soils.
The 2008 vintage was characterized by a relatively long vegetative cycle, moderate rainfall (400 mm), mild summer temperatures and cool temperatures during harvest. The harvest was carried out only by hand and began on September 26th on the gravel slopes of Valladolid, and ended on October 14th in the slower cycle areas of Segovia.
The grapes, once at the cellar, were selected in whole bunches before going through a short maceration. Only the first musts were selected to produce the Baluarte 2008. After a prolonged cold process, as a means to reveal the quintessence of the aromatic Verdejo variety, the musts were handled according to traditional production methods, and with a tightly controlled temperature regulation.
Colour • Intense. Yellow, bright, with greenish reflections.
Aroma • Very intense. Floral (white cherry flowers), pineapple and citrus (green lime, grapefruit). Herbal aftertaste.
Palate • Fresh and lively. Ampleness maintained thanks to a good acidity. Very persistent. Peach and green lemon flavours on the aftertaste.
